China has a long history of cultivating natural oil crops, boasting a rich variety. This dates back to the reign of Emperor Wu of the Western Han Dynasty, when Zhang Qian was on a diplomatic mission to the Western Regions. The “Records of the Three Kingdoms: Wei Shu” records that Wei General Man Chong, while defending against Sun Quan’s attack on Hefei, “broke pine trees into torches, filled them with sesame oil, and set them on fire from an upwind position, burning the enemy’s weapons.” Recalling this battle, the flames raged on one side, while the aroma of burning sesame oil filled the air. One wonders if the soldiers on both sides drooled as they fought. The Western Jin Dynasty’s “Qimin Yaoshu” (Essential Techniques for the People of Qi) contains numerous recipes, demonstrating the widespread use of sesame oil.

During the Song Dynasty, movable type printing and the compass, two of the Four Great Inventions, emerged during this period. Oil extraction technology also advanced significantly during this period, and the variety of oil crops used for this purpose began to increase. In his book “Jilie Bian” written by Zhuang Chuo of the Northern Song Dynasty, it is recorded that “oil is available in all directions, and the best edible oil is sesame, commonly known as fat sesame. People in Hedong eat hemp oil, while those in Shaanxi use almond, red and blue flower seed, and rapeseed oil. In Shandong, Xanthium sibiricum oil is also used, and in Yingzhou, fish oil is also used.”
