Chili oil is a condiment made primarily from chili peppers and oil, widely used across Asia. It’s typically made by blending chili powder (or crushed chili peppers) with heated cooking oil, and sometimes spices like Sichuan peppercorns, sesame seeds, and star anise are added, giving dishes a spicy, bright red color and unique flavor.
Is chilli oil healthy​?
Whether chili oil is healthy depends on the amount consumed and how it’s prepared. While moderate consumption can boost immunity and increase appetite, excessive consumption can lead to high calorie and fat intake and gastrointestinal irritation. Therefore, chili oil is a condiment that requires careful consumption, especially for those with hypertension or chronic gastric problems.
How to make chilli oil?
1. Prepare the ingredients: 1 teaspoon Sichuan peppercorns, 2 star anise, 3 bay leaves, some green onions, some ginger, some garlic, some salt, some chicken bouillon, and some water.
2. Soak the peanuts in water and wrap them in their skins. Heat oil in a wok until 50% hot. Add the peanuts and fry over low heat until lightly browned. Remove from heat and let cool.
3. Wrap the fried peanuts in plastic wrap, tie the top, and crush with a rolling pin.
4. Add a teaspoon of salt to the chopped dried chili peppers.
5. Add an appropriate amount of water to the chopped chili peppers (not too much, just enough to moisten the chili peppers). Mix well.
6. Shred the green onions, ginger, and garlic, and slice them.
7. Heat oil in a wok until 50% hot. Reduce heat and add the Sichuan peppercorns, star anise, and bay leaves. Fry for 2-3 minutes. Remove from heat.
8. Add the green onions, ginger, and garlic and fry for 2-3 minutes.
9. Fry until the green onions, ginger, and garlic are lightly browned. Remove from heat.
10. Add sesame seeds and peanuts and fry for 2-3 minutes.
11. The chili oil is so fragrant.
